Earlier this week, I had the absolute pleasure of attending LTK Con in Dallas, and let me just say—it was AMAZING!! 🤩 šŸ¤© 

Incase you’re wondering, LTK Con is an annual event for top creators to connect with brands, learn new strategies, and meet other creators from the industry. This experience taught me so much!

Even though I didn’t know many people— stepping out of my comfort zone and attending was honestly the decision! 😊 

In this letter, I’m going to share my go-to’s from LTK Con that I had on repeat! Oh, and I made the most delicious eggplant parmesan for dinner a couple of weeks ago that I just had to share! 🄰 

Beauty Faves

L'Oreal’s Infallible Bronzer has become a staple in my routine this past week. I’ve been using it to warm up my complexion, especially when I need that extra glow for long days filled with events and photoshoots. Hands down my fave drug store bronzer so far! If you’ve been on the hunt for a bronzer that’s affordable and checks all the boxes, this is it!

THIS WAS A MUST FOR AWARDS NIGHT! šŸ˜ You guys loved this on my stories! It’s vibrant, it’s bold — it’s just perfect for the occasion! I paired it with these beautiful YSL black heels with a Chanel clutch. Had to keep the jewelry pretty minimal because the dress deserved all the attention! I have it linked in my LTK for you!

I’m obsessed with this chic neutral look. I’ve already worn this dress twice in one week, but honestly, it’s just too good not to repeat! The belt around the waist gives it that perfect tailored look, yet still it’s flowy and comfortable. For some extra style I threw over my Gucci cardigan (from the kids section btw 🤪). I have lots of different styles linked on my LTK so you can find what you like best. 😊

You know I love a good monochrome moment, and this look was perfect for their theme ā€œFrost Glamā€. The structured vest adds a modern touch, while the flowy skirt balances it out— it’s just super classy! These pieces are super versatile! You can style the vest on its own with jeans for a more casual look, or pair the skirt with a colorful top to mix things up.

Recipe of the Week

I whipped up some eggplant parmesan for the family, and it was a total hit, even the kids liked it! There’s something about that crispy, cheesy goodness that makes it impossible to resist. If you’re in the mood for some comfort food, you’ve got to try this recipe!

  1. Prep the Eggplant:

    • Lay the eggplant slices on paper towels and sprinkle with salt to draw out excess moisture. Let sit for about 15 minutes, then pat dry.

  2. Set Up Breading Station:

    • In a bowl, whisk together the eggs with a pinch of salt and pepper for the egg wash.

    • In another bowl, pour the Italian breadcrumbs.

  3. Fry the Eggplant:

    • Heat 1-2 tablespoons of oil in a pan over medium heat.

    • Dip each eggplant slice in the egg wash, then coat with breadcrumbs.

    • Fry the slices in the hot oil for about 2 minutes per side, or until golden brown. Remove and set aside.

  4. Assemble and Cook:

    • In the same pan, add your choice of marinara sauce (homemade recipe below).

    • Return the fried eggplant slices to the pan, embedding them in the sauce.

    • Top with mozzarella slices and fresh basil.

    • Cover and let the cheese melt, or broil for a few minutes if you prefer the cheese browned.

  5. Serve:

    • Serve the eggplant parmesan over a bed of arugula, with a side of pasta, or enjoy on its own!

  • 4 tbsp extra virgin olive oil

  • 3 cloves fresh garlic, minced

  • Small bunch of fresh Italian parsley, chopped

  • 1 (28 oz) can of whole or chopped tomatoes (or purĆ©e)

  • 1 1/2 tsp sea salt

  • 4 large fresh basil leaves

  • Optional: Red pepper flakes (for heat)

Instructions:

  1. Heat olive oil in a saucepan over medium heat. Add minced garlic (and red pepper flakes, if you like a lil spice šŸŒ¶ļø ) and sautĆ© until just starting to brown.

  2. Add chopped parsley, stir, and then add the tomatoes. Cover to reduce splattering.

  3. Let simmer, stirring occasionally, until thickened and fragrant. Add salt and fresh basil leaves.

  4. Use immediately or let cool and store for future use.
